Scrambled Tofu

Serves 1, 3 Protein boxes per serving

Ingredients

½ Tbsp Extra-Virgin Olive Oil or cooking spray (such as PAM)
6 oz Firm tofu, drained and crumbled with a fork
1 oz Low-fat Vegan Soft Cheese
½ Tbsp Tumeric Powder
Salt and Fresly Ground Black Pepper
1-2 Tbsp Unsweetened Soymilk (optional)

Instructions

Heat the oil in a saucepan over a moderate heat.

Add the turmeric, and after 10 seconds add the tofu, cheese, salt and pepper. Stir over a gentle heat until
the tofu is hot and looks like a scrambled egg.

If you like a runnier scramble, add a little unsweetened soy milk until you get the right consistency.
