Scrambled Tofu
Serves 1, 3 Protein boxes per serving
Ingredients
| ½ Tbsp | Extra-Virgin Olive Oil or cooking spray (such as PAM) |
| 6 oz | Firm tofu, drained and crumbled with a fork |
| 1 oz | Low-fat Vegan Soft Cheese |
| ½ Tbsp | Tumeric Powder |
| Salt and Fresly Ground Black Pepper | |
| 1-2 Tbsp | Unsweetened Soymilk (optional) |
Instructions
Heat the oil in a saucepan over a moderate heat.
Add the turmeric, and after 10 seconds add the tofu, cheese, salt and pepper. Stir over a gentle heat until
the tofu is hot and looks like a scrambled egg.
If you like a runnier scramble, add a little unsweetened soy milk until you get the right consistency.
