Quick Curried Tofu

Serves 3, 1 Protein box per serving

Ingredients

9 oz Firm Tofu, drained and thinly sliced
2 Tbsp Low-fat Mayonaise
2 Tbsp Low-fat Plain Yogurt
1 tsp Curry Powder

Instructions

Preheat the oven to 350°F.

Mix the mayonnaise, yogurt and curry powder together and spoon over the tofu, moving the slices
around so that they are all evenly coated.

Bake for 15-20 minutes and serve.

*For vegan recipe use low fat vegan mayonnaise and low fat vegan yogurt
