Broiled Canadian Bacon With Apricot Preserves

Serves 8, 2 Protein boxes and 1 Carbohydrate box per serving

Ingredients

1 lb. Canadian Bacon, cut into ¼ inch slices
¼ cup Sugar-free Apricot Preserves
¼ tsp Mustard Powder

Instructions

Preheat broiler.

Place Canadian bacon on broiler rack about 3” from heat and cook for 4 minutes.

In a small bowl, combine apricot preserves and mustard.

Turn bacon and brush with preserve mixture. Broil for 4 minutes longer, or until bacon is well done.
